Banana Peanut Choc Chunk Bites
Do you ever have overripe bananas lying around? Why not try these gluten free, oil free, vegan bites? These are ready in under half an hour and are perfect for packed lunches, a nibble with your morning coffee, or a quick afternoon snack!
Do you ever have overripe bananas lying around which are a bit too mushy to eat? If you don't fancy freezing them to make Nice Cream (see also Blueberry Honey Nice Cream, or Helado de Lúcuma), then these protein packed bites are the perfect sweet treat for a quick pick-me-up!
Using only whole food ingredients, these gluten free, oil free, vegan bites are ready in under half an hour and make a great snack or dessert.
Ingredients
2 ripe bananas
3 heaped tbsp oat flour
1/4 cup (around 1 1/2 small handfuls) dry roasted peanuts
1/4 cup (around 1 large handful) vegan chocolate chunks
3 level tbsp coconut or date sugar
1 level tbsp ground golden flax seeds
1/2 tsp baking powder
salt and / or black pepper to taste (optional)
1/4 tsp ground cinnamon (optional)
1/8 tsp peanut butter - optional (topping)
Method
- Preheat the oven to 350°F/ 180°C.
- Mash the bananas in a bowl using a fork or a potato masher.
- Mix in the oat flour, coconut or date sugar, flax seeds, baking powder, cinnamon and salt/pepper.
- Stir in the peanuts and chocolate chunks.
- Using 2 teaspoons, spoon the mixture onto a linked baking sheet, they should form small slightly flattened balls.
- Optional- top with peanut butter and a single peanut for decoration
- Bake at 350°F/ 180°C for 20 minutes.
- Leave to cool for about 10 minutes before serving.
These keep for 2-3 days in a cool, dark place, and are perfect for packed lunches, a nibble with your morning coffee, or a quick afternoon snack!
