Brilliant Bread Casserole
The perfect recipe for leftovers- starchy, filling, cheap, and works with (almost) any food you've got in!
This recipe is the perfect way to use up stale bread, especially home baked crusty loaves which come into their own in this dish.
It takes less than 5 minutes to prepare, pop into the oven for 35-40 minutes, and you have a hearty, filling meal for your loved ones.
Ingredients
A good chunk of stale crusty bread
1 tin chopped pr crushed tomatoes
1 onion (chopped)
1 bell pepper (chopped)
3 mushrooms (chopped)
1 handful grated cheese or yeast flakes
1 tbsp EVOO to line the baking dish
If you only have some of these, or have other leftover veggies or meat to use, bung it in! The great thing about this recipe is that almost anything goes- beans, sausages, potatoes, rice, cole slaw.. mix it in!
Method
Grease the baking dish with the EVOO, add your veggies, bread, tomatoes, season to taste, and mix. Cover with cheese or yeast flakes and bake at 365°F or 185°C for 35-40 minutes and serve family style with bowls and a big spoon! Enjoy for breakfast, lunch, or dinner!
