Chilli Fusion Bowl
2 of the most popular cuisines in the world- Italian and American- comfort food on a plate!
Here I merged two of my favourite dishes from these incredible places to make an Italian American Fusion Bowl- a Chorizo infused chilli with luxurious sheets of lasagna to soak up all the extra flavour. You can add any veggies you have to hand, and play with the spices and flavourings to suit your tastes! I can't wait to see what flavour combinations you come up with!
This recipe is vegan, and can be made gluten free by substituting the pasta for gluten free pasta, or sliced courgette/ zucchini.
Ingredients
1 chorizo style sausage- I used Trader Joe's Soy Chorizo (which, by the way, freezes really well - I stock up on these each time I visit!)
1 can pitted black olives, sliced
1 tin red kidney beans
1/3 onion finely sliced
1/2 courgette/ zucchini diced
1/2 bell pepper diced
8 lasagna sheets (2-3 per person)
1 tsp smoked paprika
1 tsp cumin seeds
1 tsp chopped garlic
salt and pepper to taste
Method
Place a saucepan 2/3 full of salted water on high heat to boil.
In a deep bottom pan or saucepan add a little water and place on medium heat. Add the onion and cumin seeds and stir until the onion begins to soften.
Next, add the beans, garlic, pepper, and chorizo stirring to combine and to distribute heat evently.
Once the water has reached a rolling boil in the saucepan, add the lasagna sheets, stirring to ensure they do not stick together.
Add the paprika and courgette/ zucchini along with 1/2 the black olives, and season to taste.
Once the pasta is cooked through, drain and arrange in bowls to resemble a bowl/ flower shape.
Spoon the chorizo mixture into the middle of the bowls and top with the rest of the sliced olives.
Enjoy with a good TV show and/ or even better company.
