The miso gives the spread a deep, earthy flavour and savoury undertone. You could substitute with a pinch of salt if preferred. I love to add cinnamon, cardamom and ginger powders to bring a warmth to the spread, and to get all those extra nutrients in.
Ingredients
1 ripe banana- the riper the better, this is what will sweeten the spread.
2 ripe figs (optional) I used big chunks of white figs as they were in season, dried figs or dates would also work really well here.
1 tsp miso (optional)-I used a 3 year aged barley miso, but a sweet white miso would work really well here.
1/8 tsp ginger (optional)
a sprinkle of cardamom (optional)
1/8 tsp cinnamon (optional)
1/2 tbsp cocoa powder
Method
Roughly chop the figs and add to a large bowl.
Using a masher or a fork, mash the banana with the bowl with the chopped figs.
Mix in the remaining ingredients.
Spread liberally on a toasted slice of your favourite bread, a seeded cracker, or spoon it onto some oatmeal/ porridge.
