Peanut Crumble Baked Pears
I was looking for a warming dessert to use up some beautiful Bosc pears I'd received in my Misfits Market box this week. I used to love fruit crumbles when I was little, but honestly I was always more excited about the crumble part than the fruit. This time round, I wanted the pears to steal the show in this dish, but to bring back memories comfort food my Mum used to make. This gluten free recipe offers a punch of protein, a crunch of oats, and a snuggle for your tummy delivered in a juicy sweet pear boat.
Give this a try at home, if you're not a fan of pears, you can try with apples or plums instead.
Ingredients
1 Bosc pear per person
1/4 cup oats per person
1 tbsp natural peanut butter per person
1 tsp honey per person (subsitute agave to make a vegan version)
1/2 tsp vanilla extract
1/4 cup vegan milk substitute (I use vanilla macadamia milk)
Method
Preheat the oven to 350F/ 175 C. Halve and core the pears, place in an oven safe/ Pyrex dish. In a mixing bowl add the oats, peanut butter, honey, vanilla extract, and milk and mix thoroughly. Generously spoon onto the pears, beginning at the cored part, and spreading up, adding to the mixture until the 'stuffing' forms a small heap on the fruit.
Bake for 35-40 mins, allow to cool slightly and serve with some vanilla ice cream.
