Delectable Delicata Squash Rings

Delicata squash is versatile, and easy to cook- the skin is so soft, you don't even need to peel it! This recipe is free from fat, high in fiber, and has added protein. Enjoy as a side dish, or as a snack - dip it into cheesy garlic sauces, ranch, or BBQ sauce for a yummy treat.

Delectable Delicata Squash Rings

For me, fall isn't fall until Delicata Squash is for sale at the local markets. This is one of my favourite veggies, and the fact it's only available for a few months each year makes it even more special.  These beauties are so versatile, and easy to cook- the skin is so soft, you don't even need to peel them! My favourite two ways to cook these are stuffed as a filling main course, or in slices/ chips as a side. I cooked these up as rings a couple of times recently, and fooled some of the family into thinking they were fried onion rings!

This recipe is free from fat, high in fiber, and has added protein. Enjoy as a side dish, or as a snack - dip it into your favourite dipping sauce- here I served it with cheesy carrot green garlic butter. This would work well with ranch, or a honey BBQ sauce for a yummy treat.

Ingredients
Delicata Squash- as many or few as you like. Depending on size I find 2 are plenty as an appetiser for 3 adults, or 1 larger squash as a side.
Nutritional Yeast- this gives a boost of protein and B vitamins, and has the added quality of giving extra crunch, almost like breadcrumbs!
Salt and pepper to taste- I love to use a little black garlic salt here
Cumin seeds- optional- these will toast in the oven and give an extra warming autumnal scent and taste to these.

Method
Pre-heat the oven to 350°F/ 180°C
Slice the delicata squash into rings about 1.5cm thick (1/2 an inch) and remove the seeds from the middle using a small spoon. You can wash these and either bake them to make your own flavoured squash seeds as a snack, or plant them to harvest next year!
Lay the disks onto an oven tray lined with baking/ parchment paper.
Sprinkle the yeast, salt, and pepper, and any other seasoning of your choice onto the rings, and place into the oven for 10 minutes.
Once they have cooked for 10 minutes, remove the tray from the oven, flip the disks onto the other side, sprinkle the yeast and seasoning again, and return the the oven for another 10 - 15 minues until soft.

Serve with your favourite dish, or as an appetiser to dip.
