Juicy Pulled Jackfruit (Vegan Pulled Pork)

Dangerously moreish this is so good most people who have tried this didn't realise it wasn't the real thing! Serve at your family BBQ with pretzel buns and a beer!

Juicy Pulled Jackfruit (Vegan Pulled Pork)

This recipe is  easy to whip up and bring along to your next get-together this summer. If you can't find Jackfruit at your local supermarket, it is available on Amazon either in cans or in large packs (perfect for bulk making this then freezing it in batches for later on!)

Ingredients
1 tbsp EVOO
1 medium onion finely chopped
2 cloves garlic finely chopped
Jackfruit pieces- I used 1 20oz can which served 3 people generously
1 tbsp soy sauce
1 tsp liquid smoke
1/2 cup bbq sauce of your choice

Method
Add the finely chopped onion and garlic along with the EVOO to a saucepan on medium heat, stir until the onion has gone translucent. Drain the jackfruit and add it to the saucepan. Add 1/2 the bbq sauce, stir, then cover and leave on medium/low heat, stirring intermittently to ensure the mixture doesn't stick to the bottom of the saucepan.
Add the soy sauce, liquid smoke, and the rest of the bbq sauce after about 10 minutes, continue to stir. You should see the jackfruit become more pliable, once the jackfruit has softened you can pull it apart with 2 forks.
Serve on pretzel buns with a little vegan cheese or garlic spread and a side of salad or fries.
