Lentil Pancakes
Ever looking for a high protein, gluten free, cheap and easy to make bread, wrap, or pancake? Look no further! These have just 2 ingredients and can pair with almost anything!
Ingredients
Lentils
Water
Salt (optional- to taste)
Method
Place 1 cup lentils, here I used red lentils, in a blender with 2 cups of water. Add salt to taste (I used a pinch of Maldon sea salt flakes)
Leave for 1hr to soak.
Blend on high for 2-3 minutes until no lumps remain and a batter is formed.
Put a non-stick flat skillet pan on medium to low heat, add about 1 tbsp of the lentil batter. Smooth the batter out into a thin pancake shape
Once the down side starts to lift a little off the pan at the edges, flip and cook the other side.
Repeat untl no batter remains!
Serve with... anything you fancy! Curry, soup, guacamole, stir fry, fruit, veggie burgers, salad.. the options are endless!
