(N)ice Cream
One fruit that never gets thrown away when it's overripe in our household is banana. It's so versatile!
If you're not a fan of them once they've gone a bit mushy, and you're fed up with banana bread, why not give this a go?
Peel your bananas and leave them in the freezer until you have a craving for something sweet, then add a couple to the blender with whatever flavours you fancy, and you have a decadent tasting dessert in minutes for a fraction of the price of gelato or dairy free ice cream in the shops.
Here I flavoured the banana with some peanut butter, which gave a mini protein boost, and a little maple syrup for added sweetness.
This recipe works well with other frozen fruit too, especially berries! I've also tried adding cocoa powder for a rich chocolate flavour.

Ingredients for Salted Peanut Butter Nice Cream
3 frozen peeled bananas
1 tbsp maple syrup
1 pinch salt - I used smoked sea salt by Maldon
2 tsp peanut butter- I only had smooth peanut butter in, but if you prefer a crunch, I'd recommend adding crunchy peanut butter once the bananas are blended, then pulsing the blender a couple of times to incorporate
Method
Leave the bananas to thaw for a couple of minutes, to make them easier to blend, then add all the ingredients to the blender, and blend on low to medium until smooth.
Scoop into a bowl, and enjoy!
