Looking for a quick protein packed lunch that will fill you up? I got you!
Bean/pulse based pasta (here I used black bean spaghetti) adds a bunch of protein to this dish, but the sauce has so much protein in it, it works well with rice or wheat based noodles too!

Ingredients (feeds 3-4 adults)
1 1/2 tbsp peanut or almond butter (unsweetenened), or 1 tsp powdered peanut or almond butter (unsweetened) - I used powdered almond butter.
1 tsp tamari/ soy sauce
5 cups hot water
1 package pasta- I used Black Bean Spaghetti by Expolore Cuisine
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 tbsp vinegar- I used seasoned rice vinegar, but apple cider vinegar would also work well here. If using mirin, I'd recommend 1/2 a tbsp or the sauce could be too sweet.
1 tsp chilli based seasioning (optional)- I used Merquén- a Chilean smoked chilli seasoning, you could also use a dash of hot sauce or Gochujang which would work well here.
1 sprig basil to serve (optional)

Method
In a wok or large flat bottom high sided frying pan add the water, and heat on high. Once it's around boiling, add the noodles.
Once the noodles begin to soften, add the nut butter, vinegar, onion, and garlic powders and stir with a vinyl or wooden spoon/ spatula until incorporated with the water. Add the tamari/ soy sauce to taste.

Serve once the pasta is cooked through and garnish with chilli and/ or herbs.
