Perfect Pimms Pops
The perfect accompaniment to any summer day, these fruit filled easy-to-make ice lollies are a sure-fire hit! This is based on a British summer classic- the Pimms Fruit Cup (found on tap next to the beer at any establishment from June 'til September throughout the UK!). If you can't find Pimms, any gin or dark rum would work here, you can even make a version with no alcohol everyone can join in on the fun!
Ingredients (makes 6 lollies/pops)
12 thin slices English cucumber
2 strawberries thinly sliced
12 blueberries
1 orange sliced to 1cm thick then quartered
4 mint leaves thinly sliced width-ways
3 shots of Pimms No1
1 750ml bottle diet Sprite
Method
In each ice lolly/ popsicle molds add 1/2 a shot of Pimms, 2 slices of cucmber, 2 blueberries, 3 slices of strawberry, 2 chunks of orange, and a couple of slices of mint leaf then fill the rest of the mold with Sprite.
Cover with the top of the mold (the part with the stick!) and freeze for 4 hours.
