Sláinte! A Vegan Soda Bread

This vegan, oil free, whole grain bundle of yumminess takes minutes to make, and, unlike the traditional version, you probably have all the ingredients in your pantry already!

Sláinte! A Vegan Soda Bread

Hope you all had a perfect St Paddy's Day!
To celebrate, along with a delicious dram I cobbled together a very quick vegan soda bread.
Instead of the traditional buttermilk, I used some apple cider vinegar and water along with the baking soda which still gives that beautiful rise.
This is a loaf you can make in minutes, the perfect accompaniment to a bowl of soup, some fruit or jam, or a curry.
It makes a delicious sandwich too!

Ingredients
1 cup rye flour
2 cups whole wheat  flour (I used flours from @janiesmill who have gorgeous milled organic grains)
1 tsp barley malt (optional)
1 3/4 cups water
2 tbsp apple cider vinegar
1 1/2 tsp baking soda
1 tsp salt
1/2 cup of oats- about 3/4 for inside the bread, and half to sprinkle on top.
a handful of pumpkin seeds to sprinkle on top


Method
Preheat the oven to 400F, mix the dry ingredients in a large mixing bowl, then add the water and vinegar.
Form into a ball, place on a baking tray with parchment paper dusted with flour, and slice into 4 (your slices should cut about half way into the loaf, this helps the bread to cook through).
Sprinkle your toppings (oats/seeds).
Bake for 35mins on 375F.
