Southern Style Wraps
These vegan wraps are the perfect quick evening meal. Veggie fuelled fibre and beans for a bbq flavoured protein kick round off this delectable dinner. For a gluten free option swap the whole wheat wraps for a gluten free alternative.
These wraps are super quick to make and are guaranteed to fill you up in a flash. Plenty of beans for protein complemented with a zesty guac will leave you craving another bite.
Ingredients
For the Guacamole
Mash 1 large or 2 small avocados
1-2 spring (green) onions finely chopped
1 medium tomato finely chopped
1 tbsp EVOO
1 tsp garlic salt
1 tsp lime juice
mix the ingredients together in a bowl, the mixture should be chunky rather than completely smooth
For the BBQ Black Beans
Drain and rinse 1 can of black beans (red kidney beans would be a great substitute), add to a saucepan with 1 tbsp EVOO, 1/4 cup of water, and 2 tbsp BBQ sauce, stir frequently on medium heat for 15 minutes. Serve in a bowl next to the guacamole.
For the Sautéed Vegetables
On medium heat, sautée sliced pepper, mushroom, shallot, and courgette/ zucchini with a splash of EVOO for about 7 minutes until tender.
Serve in bowls along with a pile of warm whole wheat tortillas for a DIY dinner.
