Two Minute Tasty Tomato Salad
The fastest recipe yet- this fresh flavourful side dish works a treat with salads and cooked meals alike! This is vegan, gluten free, and paleo.
Simple, refreshing, guilt free- the perfect side dish! This can be used in a salad, as an accompaniment in wraps, a bruschetta or flat bread topping- in fact, this dish can join almost any summer course and is a must at any party (so long as your guests aren't allergic to tomatoes of course!)
Ingredients
Tomatoes- lots of them! I love using multi coloured cherry tomatoes for aestetics, but honestly any ripe in-season tomatoes would work well in this dish
spring onions
basil
1 tbsp EVOO
1.2 tbsp balsamic vinegar (I love using a chocolate balsamic I found in Fiore for a rich sweet undertone)
salt and pepper to taste
Method
Slice the tomatoes into 3 pieces widthways (if they are cherry tomatoes, if they are plum or heirloom tomatoes, slice into large square chunks) and add to a large bowl.
Slice a generous handfull of basic leaves along with the green onion and add to the bowl with the tomatoes. Add the oil and vinegar, and salt and pepper to taste, stir, cover with cling film/ Saran Wrap and leave in the fridge for at least half an hour to soak up the flavours.
For a spicy kick add a sprinkling of chipotle flakes.
