Rainbow Crudités / Veggie Nibbles
This is a little break from the norm in that this isn't a recipe per se. I'm sharing this in the hope it will give you some new ideas for snacking / nibbles. I can't wait to see what you create!

I hope you were able to enjoy the holidays. I know for many of us it wasn't quite the celebration we had been hoping for, but I hope you had a chance to spend time with loved ones making wonderful memories. No matter what this year brings, I wish you all happiness, peace, and good health.
This is a little break from the norm in that this isn't a recipe per se. I'm sharing this in the hope it will give you some new ideas for snacking / nibbles. My favourite way to eat is by grazing- having some nibbles on the coffee table whilst relaxing on the sofa and watching something silly on TV. It's so easy to go for beige foods when we're in the mood for nibbles- those frozen appetizers you can get in supermarkets, bread and crackers, cheeses... but I wanted a healthier alternative. These rainbow crudités are eye catching, and bring a selection of colours, textures, tastes, and smells. Pair them with some nuts or seeds for a little extra protein, or with a freshly made flatbread to make your own kebabs or individual pizzas.
Here I used some mini cucumbers, rainbow radishes, multi colour cherry tomatoes, spring onions/ scallions, clementine, honeycrisp apples, rocket/arugula, blueberries, and sugar snap peas, but you can give this a go with your favourite raw fruits, leaves, and veggies, or even add some dried fruit for a super sweet bite. You could add a little sumac, a pinch of smoked salt, or some fresh herbs too. If you're feeling patient, you could even arrange the slices to make different animals or flowers- see my (failed) attempt at a cucumber snake on the right!
