The 'I Can't Believe It's Vegan' Breakfast Sandwich

Last year I was back and forth to the UK a lot trying to look after Mum as best I could as she was dying. Honestly, 2019 put a lot of things in perspective, and that, along with the events of 2020 have really made me appreciate the importance of being with your loved ones. The importance of not taking a single moment with them for granted.
I was never really a big breakfast person, but I'd come to really appreciate taking the time to have brunch with my husband, and wanted to make our time together as enjoyable as possible. This was one of my creations for just such a brunch- something a bit different, comforting, and something we could take time to enjoy together.

Hash (for 2-3 people)
2 russet potatoes skin on- grated
1 med zucchini- grated
1/2 small white onion finely sliced
2 cloves garlic finely chopped
seasoning- I used salt of the earth and Trader Joe's umami mushroom seasoning
1/2 cup whole wheat flour- for a gluten free version use chickpea flour, potato flour, or lentil flour.

Toppings (per person)
1 Sausage style breakfast patty, I used Good Earth brand's Maple breakfast Patty, although any plant based patty would work here
a sprinkle of grated mozzarella style vegan cheese- I used Trader Joe's almond based mozzarella
1 American Cheese style slice- I used Trader Joe's soy based version
2 slices bread- I used Ezekiel bread, but any good quality sliced bread would be delicious here.

Method
Grate zucchini and potatoes, and finely chop the onion, add some salt and leave for 5 minutes, place in a CLEAN kitchen/ tea towel and wring over the sink to dry them out, then place in a bowl. Add the garlic, flour, and seasoning, and stir with a metal spoon until well mixed. In a hot skillet/ frying pan add 1tbsp avocado oil then using a large metal spoon, take 1 heaped spoon full of the mixture and place in the pan, using the back of the spoon to level the mixture allowing it to cook more evenly. Once the underside is browned (this typically takes around 2-3 minutes), use a spatula to flip the hash over allowing it to cook on the other side. Once browned, place on a plate with a piece of kitchen roll/ paper towel, and repeat the process with another heaped spoon full of the mixture until there is none left. You can leave any extra to cool, then freeze to enjoy at a later date- these make a great side dish too!
In another skillet/ frying pan on medium heat, place the sausage patty, again this should take around 3 minutes to cook on one side, once cooked, flip and cook the other side.
Layer on one slice of bread- sausage patty, hash, and cheese, then top with the other slice.
Enjoy with a large cup of coffee or tea!
