Gluten free and vegan, these make the perfect side dish for your summer barbecue.

Zesty Zucchini Spears

The perfect BBQ side- these caramelised courgettes have a zing of citrus and are guaranteed to be gobbled up in a flash! Enjoy with grilled pineapple, or watermelon, some veggie skewers (see https://snugglegrub.com/chimichurri-veggie-skewers) and burgers to feed the whole family.

Ingredients
Courgettes/ zucchini- 1 large or 2 small per person
1 orange
2 garlic cloves, minced
A sprinkle of Italian Dried Herb mix, or similar to taste- I love to use the Garlic and Herb Grinder by Olde Thompson
1 tsp garlic salt
2 tbsp EVOO

Method
Cut the courgette/ zucchini into spears, I find quartering lengthways, then halving gives a good size for this recipe. Put the speared courgette/ zucchini into a ziplock bag, squeeze the juice of the orange, and add the rest of the ingredients into the bag, seal and shake. Leave to marinate for at least 1 hour before cooking. Cook until slightly calamelised on all sides and serve.
